Chef Baril’s New Menu
Fresh Flavors from the land and the sea.
Maine-born Executive Chef Derek Baril has crafted a brand-new menu that will include a mix of classic brunch items, popular features from the dinner menu, and original creations. Market produce and ingredients from Front Range farms and ranches will be front and center, of course. Highlights include:
- Wild Sockeye Salmon Salad (showcasing Toohey Farms greens grown by engineer-turned-farmer Christian Toohey)
Roasted Beet Salad (with Soul Patch Farm beets that will be coming from Longmont)
Rogue Farms Egg, Ham and Toohey Spinach Scramble (with Rogue Farms eggs that are being fed non-gmo feed sourced by Bradford).
Chef Baril’s Lobster Roll (made with lobster sourced from Baril’s home state—courtesy of Potts Harbor Lobster in Harpswell, Maine—and a traditional New England split top roll).
Derek is passionate about honoring the good ingredients that he brings to Wild Standard. “I always want to make sure that our guests enjoy the best preparation that will highlight the authentic flavors of produce and proteins alike.”
When talking about the lobster on his signature dish, Derek highlights:
We purchase from ethical fisherman, and friends that our business support and I want to honor their hard work. Fishing is risky job, a lot of us take for granted.”
Bold worldly inspired cocktails + classics
To complement the new lunch and brunch programs, WS’ mixologists will be serving globally inspired cocktails. The Siren Call, our libation exploration program, will take you to many ports around the world.
Cocktail-lovers will also find this worldly influence in drinks concocted for Wild Standard’s “Tiki Tuesday” list—a home-grown collection of summer refreshments, starring the Royal Hawaiian cocktail. Also available for brunch and lunch will be the Lobster Bloody Mary—a classic Bloody garnished with your choice of lobster tail, shrimp or an entire crab leg.
